From my desk: 02/19/2020

Wow! I was on a writing spree today! I love the challenges and writing prompts. I love writing for them and I love reading all of the creative output that is posted daily. Blogging has brought me so much joy!

I am thinking about writing some non-fiction for children. Not sure what age yet. I think there are a lot of topics that can be highlighted and written about. For example, homelessness. Unfortunately, the children who have experienced homelessness know what it is. Some of the other children may have heard of it. Some children don’t know what it means and some will never have to worry. I have worked with children who go home to not one single food item in their homes. I have worked with children who cannot bath because the cold water is just too cold for bathing in the winter. Electricity is not given away for free. Oil only keeps some of us warm. I am so thankful for my life and despite the losses I have dealt with, I have to say my life is pretty good. Would they be better if I still had my husband of 22 years or my 19 year old son, YES! But, God has chosen this for me for a reason. I just wish I knew what it was! Lol!

I’m watching the Democratic Debate. No, I am not going into politics in my blog. My one observation is that these people are just fighting with each other like little children. Don’t they know how silly it sounds? Hopefully all of the impressionable children are in bed.

I was reading a lot today and I was reading about Tibet. The one thing I want in life, besides a peaceful life for my daughter and others I love, is to travel. I don’t need the Hilton resorts or first-class airline tickets. I just want to see other countries and their beauty. I see pictures from countries in Europe and Asia, many islands, and other faraway places and I could cry out with my desire to see these places.

I am hoping that now that the holidays have passed I can get myself back into a routine, especially with my writing. I’m sure most people don’t pay that much attention, but I used to write much more frequently and in more volume. I enjoy writing and realize how much I miss it when I haven’t given myself the time.

My “A Name A Day” challenge isn’t really getting a response. I had one blogger ask for a name to be used but that was it. I have now used over forty names and although I am sure I will never run out of names, I am running out of ideas for using the names. I have a name set for tomorrow but I am thinking I might just end it there. I get quite a few “likes” on these posts, but I don’t think it is really appealing to anyone. That being said, it is okay, I am okay with it. This was something I wanted to do to promote positivity and although it didn’t seem to work in this fashion, I will find something new!

Last Sunday and this past Sunday we had showings on our house. We have not received any feedback, positive or negative, regarding the house. I suppose when it is right the perfect buyer will come and love it. I just wish it would happen. I am anxious to move closer to my father and into an area where there is more sunshine!

I used to be a health coach. Haha, yeah I know, if you saw me now I am not exactly the epitome of health, but I am trying to get back to eating better and exercising. It is difficult in the Northeast, as it is cold, it gets dark early, and I live on a wooded street with few houses that is super scary to walk in the dark. Again, laugh if you must, but I do get spooked easily. I am known for imagining that serial killers live in the woods near my home. Too much television in my younger years perhaps? Anyhow, there is a point to this! I used to make, and have begun making again, cauliflower crusts for pizza. The recipe is super easy and you can make them ahead of time, pop them in the freezer and then thaw as you need them. How do you make them?

I use a food processor and buy two heads of cauliflower. You can use already “riced” cauliflower but the one in the freezer at the supermarket has a lot of water and the crust have to be baked for longer.

1. rice cauliflower
2. In a bowl, mix 1 cup of the riced cauliflower, 1 egg, and 1/4 cup of shredded cheese. Mix them then poor the mixture out onto a greased piece of parchment paper. Spread out and form into a crust.
3. Bake at 425 degrees (Farenheit) for 25 minutes.

One head of cauliflower usually makes 3 to 4 crusts.
You can use 1/4 cup of egg whites instead of the whole egg if you want to cut calories.
It is best to use lower fat cheese, also for calories, but I use whatever I have.
