Growing up my mother cooked 12 seafood dishes for Christmas Eve and then made a delicious cheesecake for Christmas day. I can’t remember all of the foods but I will try:
- 1. Stuffed Mussels
- 2. Stuffed Shrimp
- 3. Clam Chowder
- 4. Some sort of white fish
- 5. Fried Calamari
- 6. Squid sauce for pasta
- 7. Steamer clams
- 8. Shrimp cocktail
When she passed away in 1994, I took over the seafood cooking but year by year the menu got smaller as the guest list got smaller. I almost always made homemade clam chowder and Steamer clams. I can’t even remember the recipes for the other things. I used to know how she made her seafood stuffing for the shrimp and the topping she used on the mussels but now I have no recollection. I also always make the cheesecake!

My mother always made oyster dressing… but with the price of oysters that is a dish that isn’t on the menu! My dad always wanted potato kugel – and I make it now too!

It is a dish of riced potato, riced onion, chicken fat, egg, salt and pepper. It is baked as a casserole so that it gets a golden crispy top and sides… So yummy with a little butter on top. https://www.kosher.com/recipe/potato-kugel-recipe-3298/

Sort of but it is baked and not fried! The texture is more like cream of wheat that’s solidified instead of hash browns….

I think I’d be okay with that. I remember my mom making potato pancakes with the blender, sort of like this!

They are fairly easy to make. They just take time to prepare.
