I grew up going to my grandma’s house very often. When we got there she always had two things in the works…one was her soup. I call it Grandma’s Soup because it is all that I remember. When I make it I use short ribs, cabbage, potatoes, celery, and seasoning. Nothing fancy but tastes so good. I do like it without potatoes so it is really just cabbage and celery. The meat comes out so tender.
The second thing was pancakes. I have been trying to figure out how to make them, then just thought I would ask “around”. I remember the big yellow bowl and there was flour and eggs….they weren’t sweet really, but she would fry them in oil. She would make tons of them and they would sit on the stove all day and we would run by and grab them all day! We never used syrup, just plain. Once I had a fritter that tasted so much like her pancakes and I guess that is what they sort-of were.
Does anyone know what I am talking about?
No one is alive anymore to ask…the few that I have asked have no idea or didn’t ever eat the pancakes. All I know is that when I first saw “real” pancakes I was surprised. I am sure I had eaten those too as a kid but it is Grandma’s pancakes that I want to make!
Did they have apples? I am Polish and I make these “chunky pancakes” with grated pieces of apples that I fry in a thin layer of oil and we eat them plain or with powder sugar on top. 🙂 they are called racuchy.

I have a recipe for Nalesniki na Drozdzach :
4 c. flour
2 egg yolks
1 whole egg
2 c. milk
2 T. sugar
2 yeast cakes
1 T. melted butter
1/4 t. salt
Soften yeast in lukewarm milk and add to beaten eggs. Stir in remaining ingredients. Beat until blended. Cover and set in warm place to rise – until light, about 1 1/2 hours. Do not stir, but lift carefully by tablespoon and fry slowly on a hot, well-greased griddle. This is a heavier pancake than the crepe like Nalesniki and must be turned. These can be made ahead and served hot or cold. Makes 18-24 pancakes.
To grease griddle use unsalted butter or pork fat as the salted butter will burn.

Could they have been potato pancakes? My Nana used to make the most delicious Irish potato scones but didn’t leave us a recipe – my mouth is watering at the thought.

I googled Polish pancakes – the ones I found were sweet and often had “fillings”…..but I imagine they were delicious plain too! They are called “Nalesiki”. Good luck finding the recipe – they sound wonderful!

These are more like crepes not pancakes, my dad used to make these for lunch when I was a kid, he worked nights so was home during the day.

Stuffed cabbage…yum…I make that really well I have to admit. The problem is it is sort of one of the recipes where you make it in bulk…I don’t always like frozen left overs.

Being Polish I remember my mom making cabbage soup, however I don’t remember her making pancakes like that. However they sound delicious, my mom made kreschi (sp?) the ones they sell in stores are nothing like my mom’s, they were deep fried and more fritter like, she’d put them on a paper towel then roll them in sugar. I too regretfully never learned the recipe, they were yummy.
